  • In the Aysén region, northeast of the city of Coyhaique and on the banks of the Ñirehuao River, we find the Baño Nuevo Stay, a 45,000 hectare cattle ranch with extensive natural pastures in one of the purest and most untouched places in the world.
  • This unique environment is home to 26,000 sheep, selected over the last 30 years under a control system from the University of Lincoln (NZ) and the expert advice of New Zealand technicians.
  • Vast Patagonian coironales are the pristine food par excellence of this extraordinary sheep mass, from which a flock of dairy sheep was developed that gives rise to Boladero cheese.
  • The milk from these sheep, processed using the best practices and technologies in sheep cheese making developed in Chile and Europe, gives rise to a unique product in each of its varieties.
